Strawberry Summer Salad

I usually keep things simple with Primal Kitchen Balsamic Dressing, but a homemade balsamic vinaigrette works beautifully too. I recently brought this salad to a family cookout, and it was a crowd favorite. The best part? Ingredients

Serves: 6–8

  • 10 oz spring mix or romaine lettuce (Little Leaf Farms lettuce works great)

  • 2 cups shredded carrots

  • 2 cups diced cucumber

  • 1 cup diced celery

  • ½ cup diced red onion

  • 1½ cups diced red bell pepper

  • 1 cup crumbled feta cheese

  • 2 cups sliced strawberries

  • 1 cup slivered almonds

  • ¾–1 cup balsamic dressing (homemade or Primal Kitchen)

  • 2–3 lbs grilled protein of choice:

    • Chicken

    • Steak

    • Salmon

    • Shrimp

Instructions:

  • Wash and dry all vegetables and strawberries.

  • Chop the lettuce and place it in a large serving bowl.

  • Add the carrots, cucumber, celery, red onion, red pepper, feta, strawberries, and slivered almonds.

  • Toss gently to combine.

  • Add grilled protein on top or mix it directly into the salad.

  • Drizzle with balsamic dressing just before serving and toss again.

  • Enjoy immediately or store undressed salad in the refrigerator for meal prep throughout the week.
