Sunshine in a salad — fresh, fiber-packed, and full of gut-loving goodness.

Ingredients (Serves 1)

  • 2 cups spring mix (or a combo of arugula, spinach, greens)

  • ½ cup cooked quinoa (cooled)

  • ¼ cup shredded carrots

  • ¼ cup sliced cucumbers

  • ¼ cup sliced bell peppers

  • ¼ cup strawberries, sliced

  • ¼ cup blueberries

  • 2 tablespoons avocado, diced

  • 1 tablespoon pumpkin seeds

  • Optional 1oz feta

  • 1-2 tablespoons fermented veggies (like kraut or kimchi — optional but powerful)

  • 3 to 4 ounces grilled chicken, salmon, or tempeh

Balsamic Berry Vinaigrette

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons extra virgin olive oil
